Ingredients

  • 1 (16 oz) packet of gnocchi
  • 1 tbsp olive oil 
  • 1 pint of Sunset One Sweet® Tomatoes, halved and some leave whole
  • 1 tbsp ghee or butter, unsalted
  • Handful fresh basil 
  • Handful of parmesan cheese
  • Pinch of sea salt

Directions

  • Cook the gnocchi as per the package instructions. 
  • In a large sauté pan, warm the olive oil on medium heat. Toss in the tomatoes and add a sprinkle of sea salt. Cook until the tomatoes soften, blister and release their juices – about 5-7 minutes. With the back end of your spoon, press down on half of the tomatoes to release the juices even more, creating a thin sauce. Set aside while you brown the gnocchi. 
  • In a medium sauté pan on low heat, melt the ghee. Add cooked gnocchi to the pan and sear on medium heat until each side of the gnocchi has browned, about 2-4 minutes per side. 
  • Add the pan seared gnocchi into the tomato sauce and mix well. 
  • Plate with a shaving of parmesan cheese, pepper and fresh basil. Enjoy!
