Green Mango and ALOHA™ Pepper Salad
3 tbsp rice wine vinegar
1/4 tsp fish sauce
1/2 tsp honey
1/2 tsp finely chopped fresh ginger
1 tsp finely chopped fresh lemongrass, white part only
1/4 tsp kosher salt
pinch freshly ground black peppercorns
2 c peeled and julienned firm green mango
2 c julienned ALOHA™ pepper
1 c julienned red onion
2 tbsp chopped fresh cilantro
2 tbsp roughly chopped shelled and unsalted peanuts, (optional)
In a small bowl, mix the first 7 ingredients until well incorporated.
Put mango, ALOHA™ peppers, onion and cilantro into a large bowl. Stir the dressing again and pour into the salad bowl. Mix all ingredients well and let sit for 10 minutes to allow the dressing to infuse the salad, mixing every few minutes.
Serve on a platter and garnish with chopped peanuts. Enjoy this fresh burst of summery flavor to bring a little bit of the tropics into your life.
