- 12-16 One Sweet® Peppers
- ½ cup extra-virgin olive oil, divided
- Kosher salt
- Freshly ground black pepper
- ⅓ cup parsley, finely chopped
- 1 tsp. smoked paprika
- 1 Tbsp. green olives, drained and finely chopped
- 2 cloves garlic, minced
- 1 lemon, zested and juiced
- 8 oz. ball of burrata cheese, torn just before serving
- Preheat a grill to medium-high heat. In a large bowl, add the peppers and toss with half of the olive oil, Kosher salt, and black pepper. Grill the peppers, flipping halfway through, until softened and they have defined grill marks. Remove from the grill and set aside.
- To make the dressing, add the parsley, paprika, green olives, garlic, lemon zest and juice, and remaining olive oil to a small bowl. Season with Kosher salt and black pepper. Whisk well to combine.
- To assemble, place grilled peppers on a platter with the burrata.
- Drizzle the dressing over the peppers and burrata. Serve.
