1 tsp fresh lemongrass, white part only, finely chopped
1/4 tsp kosher salt
Pinch freshly ground black peppercorns
Directions
In a small bowl, mix all dressing ingredients together until well incorporated.
Place peppers, mango, onion and cilantro into a large bowl. Pour dressing into the salad and toss well. Let sit for 10 minutes, tossing every few minutes.
Serve on a platter and garnish with chopped peanuts.
