Salad Ingredients

  • 2 cups Aloha™ pepper, julienned
  • 2 cups green mango, peeled and julienned 
  • 1 cup red onion, julienned
  • 2 Tbsp fresh cilantro, chopped
  • 2 Tbsp unsalted peanuts, roughly chopped (optional)


Dressing Ingredients

  • 3 Tbsp rice wine vinegar 
  • 1/4 tsp fish sauce
  • 1/2 tsp honey
  • 1/2 tsp fresh ginger, finely chopped
  • 1 tsp fresh lemongrass, white part only, finely chopped
  • 1/4 tsp kosher salt
  • Pinch freshly ground black peppercorns


  • In a small bowl, mix all dressing ingredients together until well incorporated.
  • Place peppers, mango, onion and cilantro into a large bowl. Pour dressing into the salad and toss well. Let sit for 10 minutes, tossing every few minutes.
  • Serve on a platter and garnish with chopped peanuts.
