- 2 cups Aloha™ pepper, julienned
- 2 cups green mango, peeled and julienned
- 1 cup red onion, julienned
- 2 Tbsp fresh cilantro, chopped
- 2 Tbsp unsalted peanuts, roughly chopped (optional)
- 3 Tbsp rice wine vinegar
- 1/4 tsp fish sauce
- 1/2 tsp honey
- 1/2 tsp fresh ginger, finely chopped
- 1 tsp fresh lemongrass, white part only, finely chopped
- 1/4 tsp kosher salt
- Pinch freshly ground black peppercorns
- In a small bowl, mix all dressing ingredients together until well incorporated.
- Place peppers, mango, onion and cilantro into a large bowl. Pour dressing into the salad and toss well. Let sit for 10 minutes, tossing every few minutes.
- Serve on a platter and garnish with chopped peanuts.
