Ingredients

  • 2 slices of bread
  • 4 slices of gouda cheese
  • 2 eggs, beaten
  • 1 slice cooked bacon, torn into 3” pieces
  • 3 ONE SWEET® Peppers, sliced into rings
  • Sliced avocado
  • Sliced red onion

Directions

  • Heat a nonstick skillet over medium-high heat. Add two slices of cheese directly to the center of the skillet, one slice at the top half of the pan and one slice at the bottom half.
  • Add two slices of cheese directly to the center of the skillet, one slice at the top half of the pan and one slice at the bottom half. Add the slices of bread on top of each slice of cheese, placing the bottom slice of bread upside down.
  • Pour eggs over the skillet and turn the pan to ensure mixture is evenly spread on the bottom of the skillet. Season with salt and pepper. Once the eggs have set, flip the entire “omelette.”
  • Add bacon pieces and red onion on top of the top piece of bread and add the avocado slices and pepper rings on top of the bottom piece of bread.
  • Fold in the sides of the omelette and add one slice of cheese on top of both bread slices. Fold the bottom slice of bread over the top piece. Fold the bottom slice of bread over the top piece.
