  • 1 pint Zima® tomatoes, divided
  • 1 small shallot, chopped
  • 2 Tbsp. chopped chives
  • ¼ cup champagne vinegar
  • 2 tsp. honey
  • ½ cup extra-virgin olive oil
  • 4-5 mixed citrus (i.e. blood orange, cara cara orange, grapefruit, navel oranges, etc.), peeled and sliced into rounds
  • 1 small head of radicchio, chopped
  • 2 oz. shaved ricotta salata 
  • ½ cup extra-virgin olive oil
  • Kosher salt


  • In a blender, combine 1 cup of Zima® tomatoes with the shallot, chives, champagne vinegar, and honey. Blend until smooth. Slowly drizzle in olive oil until fully emulsified. Taste and season with Kosher salt as desired. 
  • On a serving platter, arrange the citrus slices, radicchio, and ricotta salata. Halve the remaining Zima® tomatoes and arrange on top of the salad. Serve with dressing, to taste.
