Ingredients

  • 1 cup cooked farro, cooled
  • 6 SUNSET® Campari® Brand Tomatoes, quartered
  • 2-3 oranges, sliced crosswise into thin rounds
  • 1 grapefruit, sliced crosswise into thin rounds
  • 1 cup spinach
  • 1 cup arugula
  • 1 ball burrata, torn into pieces
  • 2 Tbsp fresh mint, thinly sliced
  • ¼ cup pistachios, roughly chopped

Directions

  • Spread the spinach and arugula across a large serving platter.
  • Spoon the farro evenly over the greens.
  • Arrange the orange and grapefruit slices on top, followed by the quartered SUNSET® Campari® tomatoes.
  • Tear the burrata into rustic chunks.
  • Sprinkle with mint and pistachios.
  • Whisk together the citrus juice, olive oil, and sea salt. Drizzle over the salad just before serving.
