Ingredients
- 1 cup cooked farro, cooled
- 6 SUNSET® Campari® Brand Tomatoes, quartered
- 2-3 oranges, sliced crosswise into thin rounds
- 1 grapefruit, sliced crosswise into thin rounds
- 1 cup spinach
- 1 cup arugula
- 1 ball burrata, torn into pieces
- 2 Tbsp fresh mint, thinly sliced
- ¼ cup pistachios, roughly chopped
Directions
- Spread the spinach and arugula across a large serving platter.
- Spoon the farro evenly over the greens.
- Arrange the orange and grapefruit slices on top, followed by the quartered SUNSET® Campari® tomatoes.
- Tear the burrata into rustic chunks.
- Sprinkle with mint and pistachios.
- Whisk together the citrus juice, olive oil, and sea salt. Drizzle over the salad just before serving.
