Ingredients
- 8 oz gemelli, cooked according to package directions
- 1/2 bunch asparagus, cut into 1” pieces
- 4 tbsp olive oil, divided
- 3/4 cup fresh peas, shucked
- 2 cups mixed greens
- 2 cups Wild Wonders® tomatoes, halved
- 1 cup cucumbers, sliced
- 1 lemon, zested and juice
- 1/2 cup parsley, chopped
- 1 tsp honey
- 2 tbsp fresh thyme
- salt and pepper, to taste
- 1/2 cup Parmesan, shaved
Directions
- In a skillet, over medium heat, cook the chopped asparagus in 1 Tbsp of the olive oil, season with salt, pepper. Set aside.
- Blanch peas in water for 3 minutes and set aside.
- In a large mixing bowl, combine the cooled pasta, asparagus, peas, mixed greens, Wild Wonders® tomatoes, cucumbers and lemon zest.
- Make the dressing in a small bowl by whisking; lemon juice, parsley, remaining olive oil, honey, thyme and salt and pepper.
- Toss the pasta salad with the dressing until fully combined.
- Garnish with shaved Parmesan. Serve immediately.
