Ingredients

  • 8 oz gemelli, cooked according to package directions
  • 1/2 bunch asparagus, cut into 1” pieces
  • 4 tbsp olive oil, divided
  • 3/4 cup fresh peas, shucked
  • 2 cups mixed greens
  • 2 cups Wild Wonders® tomatoes, halved
  • 1 cup cucumbers, sliced
  • 1 lemon, zested and juice
  • 1/2 cup parsley, chopped
  • 1 tsp honey
  • 2 tbsp fresh thyme
  • salt and pepper, to taste
  • 1/2 cup Parmesan, shaved

Directions

  • In a skillet, over medium heat, cook the chopped asparagus in 1 Tbsp of the olive oil, season with salt, pepper. Set aside.
  • Blanch peas in water for 3 minutes and set aside.
  • In a large mixing bowl, combine the cooled pasta, asparagus, peas, mixed greens, Wild Wonders® tomatoes, cucumbers and lemon zest.
  • Make the dressing in a small bowl by whisking; lemon juice, parsley, remaining olive oil, honey, thyme and salt and pepper.
  • Toss the pasta salad with the dressing until fully combined.
  • Garnish with shaved Parmesan. Serve immediately.
