Ingredients
- 1 cup dry orzo pasta
- 2 cups chicken broth
- 2 cups SUNSET® Campari® tomatoes, quartered
- 2 cups shredded rotisserie chicken
- 4 cups fresh spinach
- 1 cup freshly grated Parmesan cheese (plus more for serving)
- 1/2 cup heavy cream
- Fresh basil
- Sea salt & black pepper, to taste
Directions
- In a large skillet, add the orzo, chicken broth, quartered Campari Sunset tomatoes, and a generous pinch of salt. Bring to a boil, then reduce heat to low and simmer, stirring occasionally, until the orzo is tender and most of the liquid has absorbed – about 12 minutes.
- Fold in the spinach, Parmesan, chicken and heavy cream. Stir until the spinach wilts and the sauce becomes creamy and glossy. Season with black pepper and more salt, if needed.
- Top with basil and an extra sprinkle of Parmesan. Serve hot, straight from the skillet.
