Ingredients

  • 1 tsp canola oil
  • 1/2 cup onion, finely diced
  • lean ground beef
  • 1 pkg. taco seasoning
  • 2 cups Sugar Bombs® tomatoes, quartered and divided
  • 1- 15oz can black beans, drained and rinsed
  • 12 corn taco shells
  • 2 cups tex mex shredded cheese mix
  • cilantro, picked
  • iceberg lettuce, shredded
  • sour cream
  • guacamole
  • limes

Directions

  • Preheat oven to 350°F.
  • In a large skillet over medium heat, add oil. Sauté onion for 2-4 minutes until translucent.
  • Add the ground beef, breaking it up with a wooden spoon, cook for 5-7 minutes, until brown.
  • Stir in the taco season, following package directions.
  • Add half of Sugar Bombs® tomatoes and black beans, stir to combine. Turn the heat to low and simmer for 4-6 minutes, stirring occasionally.
  • In two high-sided baking pans, line with the taco shells.
  • Spoon taco mixture into Top with cheese. Bake for 10-15 minutes, until cheese is melted.
  • Top with cilantro, lettuce, remaining Sugar Bombs®, sour cream, guacamole and fresh limes, if desired.
