Ingredients

  • 3 Tbsp chia seeds
  • 3/4 cup rolled oats
  • 2 Tbsp hemp seeds
  • 1 Tbsp flax seeds
  • 1/4 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1 tsp vanilla extract
  • 2 Tbsp maple syrup
  • 1 1/2 cups almond milk or milk of choice
  • 2 cups Organic Joyberry™ blueberries, plus extra for garnish
  • 2 Tbsp lemon juice
  • 1 cup granola

Directions

  • In a bowl, combine and mix all of the ingredients, except the blueberries, lemon juice and granola. Place in the fridge for 4 hours, ideally overnight.
  • Add the Organic Joyberry™ blueberries and lemon juice to a small saucepan over medium- high, heat until bubbling. Turn heat to medium.
  • Stir and mash the blueberries with a wooden spoon as it cooks, about 10 minutes.
  • Remove from the heat and set aside to cool.
  • Once the compote has cooled and the overnight oats and chia are ready, divide the compote between serving dishes.
  • Add the oat and chia pudding mixture over the compote and finally top with granola and fresh Organic Joyberry™ blueberries.
  • Serve immediately or cover and store refrigerated for up to 3- 4 days.
