- 1 pint WOW™ Berries dreamberry™ Strawberries, sliced
- (1) 4-oz. ball of burrata cheese
For the Pistachio-Pesto
- ¼ cup shelled pistachios
- ¼ cup freshly grated parmesan cheese
- 3 garlic cloves
- 1 tsp. lemon juice
- ½ tsp. Kosher salt
- ½ tsp. freshly cracked black pepper
- 2 cups fresh basil
- ⅓ cup extra-virgin olive oil
- Water to thin as needed
- To the bowl of a food processor, add garlic, pistachios, parmesan cheese, lemon juice, salt, and pepper and process until the pistachios are finely chopped. Add in basil and chop. With the motor running, add olive oil in a slow stream until fully combined. Thin with 1 Tbsp. of water at a time until desired consistency.
- To serve, place burrata on a serving plate and scatter the strawberries all around it. Drizzle the pistachio-pesto overtop and serve.
