Ingredients

Dressing:

1/4 cup olive oil

1/4 lemon zest and juice

1 tsp garlic, minced

1 tsp Dijon mustard

1 tsp Italian seasoning

1/2 tsp sesame oil

1/4 tsp ground cumin

salt and pepper, to taste

 

Salad:

1 cup green lentils, rinsed well and cooked according to package directions

3 mini cucumbers, sliced

2 cups Bahama Bombs, halved

4 black kale leaves, stemmed and torn

4 radishes, thinly sliced

1 cup feta cheese, crumbled

3/4 cup green olives, whole

1/4 fresh parsley, chopped

1/4 fresh mint, chopped

Directions

  • Make the dressing: In a large bowl, whisk together the olive oil, lemon zest and juice, garlic, mustard, Italian seasoning, sesame oil, cumin, salt and pepper.
  • To the large bowl, add the cooked lentils, cucumbers, Bahama Bombs™, kale, radishes, feta, and olives. Toss to coat with dressing.
  • Add the parsley and mint and lightly toss again.
  • Season to taste and serve immediately.
