Ingredients

  • SUNSET® Wild Wonders Cherry Tomatoes
  • A few SUNSET® Qukes
  • 2 avocados
  • Flaky sea salt
  • Pepper 
  • 3 tbsp Extra Virgin Olive Oil + a little more to toast bread
  • 1 lemon or lime
  • Red pepper Flakes
  • Bread of choice (this is sourdough)
  • 8 mini mozzarella balls
  • 8 basil leaves
  • 8 peppercorns 
  • Everything but the bagel seasoning

Directions

  1. Coat slices of bread in olive oil and cook for 2-3 min per side in a skillet on medium heat.
  2. Add avocados to a bowl with the juice of half a lemon, olive oil, salt, pepper and red pepper flakes. Use a fork to mash until it is smooth. Season to taste, you might want to add more lemon/lime depending on preference. Spoon onto your toast in an even layer. 
  3. Using a veggie slicer, peel the cucumber into thin ribbons and slice tomato in half. To each of the toast slices, add 2 basil leaves to the top of the toast. These will be the shaping of your eyes. Add a slice of tomato to each, and then add your mozzarella balls. Press a peppercorn into the mozzarella to get the full eyeball effect. 
  4. Start laying cucumber ribbons in a criss cross pattern across the toast to make the mummy effect. Slice a little edge of a cherry tomato in a triangle shape to make the teeth. Repeat with remaining toasts. Top with some everything but the bagel seasoning and that’s it! Happy Halloween!
