Ingredients
- 3 cups ripped or cubed baguette (day-old is best)
- 1½ cups diced roasted butternut squash
- 1 cup SUNSET® Wild Wonders Tomatoes, quartered
- 2 tbsp olive oil
- 1 tbsp fresh sage, finely chopped
- 3 large eggs
- 3/4 cup whole milk
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan
- ½ tsp salt
Directions
- Preheat oven to 375°F. Lightly grease a mini muffin tin.
- In a large bowl, toss bread cubes with roasted squash, Wild Wonders tomatoes, sage, and salt
- In a separate bowl, whisk eggs, milk, and cream. Pour over the bread mixture and toss gently to coat. Let sit 10 minutes to soak.
- Spoon mixture evenly into muffin cups, pressing lightly to compact. Sprinkle with Parmesan.
- Bake 20–25 minutes until golden and set.
- Let cool 5 minutes, then pop out and enjoy! Makes about 24 bites.
