Ingredients

  • 3 cups ripped or cubed baguette (day-old is best)
  • 1½ cups diced roasted butternut squash
  • 1 cup SUNSET® Wild Wonders Tomatoes, quartered
  • 2 tbsp olive oil
  • 1 tbsp fresh sage, finely chopped
  • 3 large eggs
  • 3/4 cup whole milk
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan
  • ½ tsp salt

Directions

  • Preheat oven to 375°F. Lightly grease a mini muffin tin.
  • In a large bowl, toss bread cubes with roasted squash, Wild Wonders tomatoes, sage, and salt
  • In a separate bowl, whisk eggs, milk, and cream. Pour over the bread mixture and toss gently to coat. Let sit 10 minutes to soak.
  • Spoon mixture evenly into muffin cups, pressing lightly to compact. Sprinkle with Parmesan.
  • Bake 20–25 minutes until golden and set.
  • Let cool 5 minutes, then pop out and enjoy! Makes about 24 bites.
