Ingredients

  • 2 cups Flavor Bomb Tomatoes, halved
  • 2 acorn squash, halved and seeded
  • 2 tbsp olive oil
  • 1 lb Hot Italian/Turkey sausage
  • 1 onion, diced
  • 3 stalks of celery, diced 
  • 4 cloves minced garlic
  • 1/2 tsp nutmeg 
  • 1/2 tsp cinnamon 
  • salt & pepper, to taste 
  • DF parmesan cheese

Directions

  • Spread olive oil along the inside of the acorn squash, season with salt and pepper, and Roast at 400F for 30 minutes cut side down before allowing to cool
  • While the squash is roasting, add some olive oil to a pan and cook the onions and celery until translucent then add the garlic and cook until fragrant. 
  • Add the halved Flavor Bomb Tomatoes and continue cooking until softened. 
  • Push the onions, tomato, and garlic to one side of the pan and add the sausage and brown before mincing and cooking through. 
  • Season with nutmeg, cinnamon, and salt+pepper. Cook until most of the liquid has reduced. 
  • Fill the acorn squash with the tomato and sausage mix then sprinkle with DF cheese and broil until the top is crispy to your liking.
