– 1 can chickpeas
– 1 can cannellini bean
– 1 cup One Sweet Cucumbers, diced
– 1 cup Wild Wonders Tomatoes, halved
– 1⁄2 cup crumbled feta
– 1⁄2 cup diced red onion, diced
– 1⁄2 cup sliced green onion, sliced
– 2 tbsp mint
– 1⁄4 cup dill
– 1⁄4 cup parsley

– 1⁄2 cup olive oil
– 1⁄2 tbsp dried oregano
– 1⁄2 tsp salt
– 1⁄4 tsp pepper
– Juice of a lemon
– 1⁄2 tbsp red wine vinegar
– 2 garlic cloves



1. Add chickpeas, black eyed peas, cucumbers, tomatoes, crumbled feta, red and green onions to a large bowl.

2. Add herbs to veggies and mix well.

3. To make the dressing whisk together olive oil, red wine vinegar, juice of a lemon, garlic,
salt and pepper, and dried oregano

4. Once combined, pour dressing over prepared salad and mix well.
