Campari® Grilled Cheese

Makes two very generous sandwiches


4 slices whole-grain sourdough bread, 1/2 – 3/4 inches thick
1/4 c unsalted butter
Two (125 gram) balls of Buffalo mozzarella, drained and cut into 1/4-inch slices
4 Campari® tomatoes, cut into 1/4 slices
4 – 6 basil leaves
finishing salt, to taste
freshly ground black peppercorns, to taste


Preheat oven to 375 F.

Assemble sandwiches. For each sandwich, butter one side of each slice of bread. Place bottom slice butter-side down and evenly arrange a single thin layer of mozzarella slices on top. Next, evenly cover cheese with Campari® tomato slices. Season tomatoes with salt and pepper to taste, then layer over basil leaves and a second thin layer of mozzarella slices. Place second slice of bread on top, butter-side up.

Place sandwich in preheated cast iron pan. (Depending on how big your pan is, you may need to do this step in two batches.) Cook low and slow, letting bottom slice of bread get golden brown before carefully flipping over to the other side. The mozzarella will soften slightly. When both sides are golden brown, place the cast iron pan into the preheated oven to finish melting the cheese, about 8-10 minutes.

Transfer the sandwich to a cutting board and try to resist eating it right away. Let rest 30 seconds before slicing in half. Then dig in and enjoy!
