Spiralize zucchini and mix in a medium bowl with peppers and torn herb leaves then toss with Caramelized Onion Vinaigrette.
Add tomatoes and mix gently. Season with salt & pepper to taste. Divide mixture into 4 salad bowls or plates and garnish with julienned radicchio and more torn herbs if desired.
Caramelized Onion Vinaigrette
In a pan, over medium heat, sauté onion in 1 tablespoon of olive oil until they become golden and start to caramelize, stirring continually, approximately 30 minutes. Deglaze onion mixture in pan with white wine vinegar and cook for an additional minute. Remove from heat and set aside to cool.
In a food processor or high-speed blender, add cooled onion mixture, garlic, lemon juice, and honey. Blend until completely smooth. Slowly drizzle the remaining oil through the top while blending until mixture turns to a thicker consistency. Season with salt & pepper to taste.
