Ingredients

Cucumber Caesar Salad

  • 12 ONE SWEET® cucumbers, cut into 1/2” diagonal slices
  • 1 Tbsp fresh lemon juice
  • Kosher salt to taste
  • Freshly ground black peppercorns to taste

Creamy Caesar Dressing

  • 1 tsp fresh garlic, finely minced
  • 2 tsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 2 Tbsp grated Parmigiano-Reggiano cheese
  • 2 Tbsp extra-virgin olive oil
  • 1/2 cup plain Greek Yogurt
  • 2 Tbsp water
  • 1 tsp white miso (optional) or 1/4 tsp kosher salt
  • 1/4 tsp freshly ground black peppercorns

Directions

  • In a small bowl, whisk all Creamy Caesar Dressing ingredients together until very smooth. Keep refrigerated until ready to use.
  • In a large bowl, toss together cucumber slices with lemon juice, and salt and pepper to taste.
  • Dollop a spoonful of Creamy Caesar Dressing on the bottom of four shallow serving bowls and divide the cucumbers evenly over top.  Top with another spoonful of dressing and garnish with a lemon wedge, parmesan shavings, a drizzle of extra-virgin olive oil and a bit more freshly ground black peppercorn. Serve right away.
