Ingredients

  • 1 package Qukes™, cut into thirds
  • 2 packages Sprinkles® tomatoes
  • 3 cups watermelon, cubed
  • 1/3 cup crumbled feta cheese
  • 1/4 cup mint leaves, whole

Dressing Ingredients

  • 1/3 cup red wine vinegar
  • 3 Tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp fresh garlic, minced
  • 1/2 tsp dried oregano
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 cup olive oil

Directions

  • In a small bowl, combine all dressing ingredients and whisk vigorously. Set aside.
  • In a large bowl, combine cucumbers, tomatoes, watermelon, crumbled feta, and mint.
  • Drizzle with dressing. Toss and serve.
