Ingredients

  • 6 Campari® tomatoes, diced
  • 1 tsp. garlic, minced
  • 3 Tbp olive oil
  • 1 Tbsp balsamic vinegar
  • salt and pepper, to taste
  • 1/3 cup fresh basil leaves, torn and divided
  • 1 ciabatta bread, sliced 1/2” thick into 6 pieces
  • 1/3 cup Parmesan cheese, finely grated

Directions

  • Preheat oven to broil.
  • In a bowl, combine Campari® tomatoes, garlic, olive oil, balsamic, salt, pepper and half of the basil. Mix thoroughly; set aside.
  • On a baking sheet, place the ciabatta and toast for 1-2 minutes, until golden. Remove and turn the slices over. Add a little Parmesan cheese to each piece of bread, place back in the oven for 1-2 minutes or until cheese has melted.
  • Plate the Parmesan toasts and generously spoon the Campari® mixture overtop and add remaining fresh bail leaves.
  • Serve immediately.
