Ingredients
Beef:
1 tsp oil
1 lb. extra lean ground beef
salt and pepper, to taste
1 cup ALOHA™ Pepper, finely chopped
2 Tbsp fresh ginger, minced
1 tsp garlic, minced
1 Tbsp soy sauce
1 Tbsp rice wine vinegar
1/2 tsp sesame oil
1/2 Tbsp fish sauce
1/2 Tbsp brown sugar
1/2 Tbsp gochujang or sriracha sauce
1/2 cup green onions, finely chopped
Bowls:
4 cups mixed greens, divided
2 cups cooked white or brown rice, divided
2 ALOHA™ Peppers, sliced and lightly sautéed, divided
2 mini cucumbers, thinly sliced, divided
1 cup carrot, thinly sliced, divided
4 eggs, fried, divided
2 Tbsp green onions, thinly sliced, divided
2 Tbsp cilantro, picked, divided
Optional toppings: sesame seeds, kimchi, chili pepper
Directions
- Heat a large skillet over high, heat oil. Add the beef to the pan. Using a wooden spoon, break the beef into small pieces. Cook for 2-3 minutes, season with salt and pepper.
- Add the chopped ALOHA™ Pepper, continue to stir and cook the beef, about 4-6 minutes.
- In a small bowl, mix together the ginger, garlic, soy sauce, rice wine vinegar, sesame oil, fish sauce, brown sugar and gochujang all together.
- Pour the sauce over the beef mixture, mixing it well, continue to cook for 2-3 minutes or until beef is fully cooked. Taste and adjust seasoning.
- Stir in the green onions, cook for 1 minute and turn the heat off.
- Prepare the bowls by layering the mixed greens. Add the cooked rice on top and start sectioning the bowl with the beef. Add ALOHA™ Peppers, cucumbers, carrot and a fried egg.
- Garnish with green onions, cilantro and additional toppings.
