Ingredients

For the salad:

  • 1 pint SUNSET® Umami Bombs® tomatoes, quartered
  • 3-4 Persian cucumbers, diced3 rainbow radishes or any radishes, chopped
  • 3 cups Romaine lettuce, roughly chopped
  • 1/2 small red onion, thinly sliced
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh flat-leaf parsley leaves
  • 1/4 cup fresh dill
  • 1 cup store-bought crispy chickpeas
  • Flaky sea salt & cracked black pepper, to taste

For the garlic-sumac-pomegranate dressing:

  • 1 small garlic clove, finely grated
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon sumac
  • 1 tablespoon pomegranate molasses
  • 1/3 cup olive oil
  • Salt and pepper, to taste

Directions

  • Make the dressing:
    In a small bowl or jar, whisk together the garlic, lemon juice, sumac, pomegranate molasses, olive oil, salt, and pepper until emulsified.
  • Prep the salad base:
    In a large bowl, combine the Umami Bombs tomatoes, cucumber, rainbow radishes, lettuce, red onion, mint, parsley, and dill.
  • Add chickpeas and serve:
    Just before serving, toss in the crispy chickpeas. Drizzle the dressing all over and toss everything gently to coat. Serve and enjoy!
