Ingredients

For the Sautéed Tomato & Spiced Beef:

  • 1 tablespoon olive oil
  • 1 small yellow onion, finely diced
  • 1 cup SUNSET® Angel Sweet® Tomatoes, halved
  • Salt, to taste
  • 1 lb ground beef
  • 2 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika

For the Garlicky Yogurt Base:

  • 1 cup full-fat Greek yogurt
  • 2 garlic cloves, grated
  • Juice of 1/2 lemon

For the Pasta:

  • 1/2 lb short pasta (we used farfalle)
  • Salt, for the pasta water

For the Paprika Butter:

  • 2 tablespoons butter
  • 1/2 teaspoon smoked or unsmoked paprika

Finishing Touches:

Directions

  • Heat a generous drizzle of olive oil in a large skillet over medium heat. Add the diced onion and halved Angel Sweet® Tomatoes. Season with a pinch of salt and let them cook for 6–8 minutes, stirring occasionally, until the tomatoes burst and caramelize and the onions are soft and golden. Mix in the cumin and smoked paprika.
  • Add the ground beef to the skillet and break it up with a spatula into tiny pieces. Once it’s mostly browned, stir in the tomato paste. Let it all cook together for 5–7 more minutes until the beef is deeply browned and saucy. Set aside and keep warm.
  • In boiling salted water, cook your pasta until al dente or the texture you like.
  • In a small bowl, mix the Greek yogurt with grated garlic and lemon. Let it sit at room temp while everything comes together.
  • In a small pan, melt the butter over medium heat. Let it cook until it starts to bubble and lightly brown—keep an eye on it! Once golden and fragrant, remove from heat and immediately stir in the smoked paprika. It’ll sizzle and bloom into the butter, creating a smoky, glossy drizzle.
  • To assemble, simply add your pasta to a bowl, then top with a thick layer of the yogurt, then a drizzle of the paprika-butter, then the beef-tomato mixture, and finish off with another drizzle of the paprika-butter, parsley, halved Sunset® Angel Sweet® Tomatoes, and feta.
