Zima® and Zucchini Salad

Thinly shaved zucchini is lightly dressed in a lemon vinaigrette to complement the bright sweet flavor of the Zima® Tomatoes.

Makes 6 servings


Zucchini Ribbons
1 pkg SUNSET® Zima® Tomatoes, halved
4 zucchini, ends trimmed (about 2 lb)
1 1/2 tsp salt, divided
3 tbsp lemon juice
1 tbsp honey
1 shallot, finely chopped
2 tsp Dijon mustard
1/2 tsp freshly ground pepper
1/3 cup extra virgin olive oil
1 cup shredded Parmesan cheese

Spiced Pumpkin Seeds
1 cup pumpkin seeds
2 tsp vegetable oil
1/2 tsp granulated sugar
1/2 tsp salt
1/4 tsp each freshly ground pepper
1/4 tsp ground cumin
1/4 tsp paprika
Pinch cayenne


Spiced Pumpkin Seeds
Preheat oven to 300°F. Toss pumpkin seeds with oil, sugar, salt, pepper, cumin, paprika and cayenne. Spread on a baking sheet lined with parchment. Bake for 25 to 30 minutes or until dry and toasted. Cool completely.

Zucchini Ribbons
Using a vegetable peeler, slice zucchini into long thin strips, turning as needed and discarding the seed-filled center. Place in a colander and toss with 1 tsp salt. Let stand for 30 minutes to drain; discard any liquid. Transfer to a large serving bowl along with tomatoes.

Whisk lemon juice with honey, shallot, mustard, remaining salt and pepper. Slowly whisk in olive oil until well blended. Drizzle over zucchini and tomatoes. Sprinkle with Parmesan cheese and Spiced Pumpkin Seeds.

Chef's Notes

Salting the zucchini first releases excess moisture, making for a more flavorful salad.
