Zima® and Sausage Skillet

Serves 4

Ingredients

4 sweet fennel sausages
2 Tbsp grapeseed oil
2 C white onion, julienned
1 Tbsp Kosher salt
2 C Zima® tomatoes
1/2 C Moroccan olives

Directions

Preheat a medium sized cast iron pan to medium heat. Place sausages in pan and allow to brown on one side, approximately 5 minutes. Flip sausages and cook for another 5 minutes, then transfer the sausages to a clean dry tray. Place grapeseed oil in pan and reduce heat to low. Add onions and sprinkle them evenly with kosher salt. Move the onions around so they are all evenly coated with oil and salt. Cook them slowly, tossing frequently to prevent burning, until they are deep golden brown and have softened, approximately 20 mins. In the meantime, preheat oven to 350 F. Once onions are caramelized, add olives and tomatoes and stir gently. Add sausages and any remaining juice from the tray to the cast iron pan. Place in oven for 10 minutes. Remove pan from oven and rest for 5 minutes before eating.

Chef's Notes

Serve with accompanying sides like rice, salad, yams or potatoes.
