Wood Chipped ONE SWEET® Tomatoes and Peppers
Warning: If you don’t like the flavor of smoke then you can’t be friends with Roger Mooking.
2 C Oak wood chips
8 ONE SWEET® peppers, assorted colors
20 ONE SWEET® tomatoes
1 tsp ground fennel seeds
1 Tbsp olive oil
Kosher salt for seasoning
Freshly ground black peppercorns for seasoning
1 Tbsp chopped chives
Preheat barbecue to high heat. Make a wood chip packet roughly 16” x 12” using double layer of foil, making sure all edges are folded tightly (See below). Place wood chip packet over direct flame and using a fork, poke a dozen
holes on the top foil layer, until it begins to smoke. In a bowl, toss together remaining ingredients and place the tomatoes and peppers in a single layer on top of the punctured foil. The smoke will infuse the veggies with distinct flavor while the foil will serve as a temporary flat top griddle to char and cook the vegetables. Close barbecue lid and allow veggies to cook on each side for about 5 to 7
Transfer to a serving tray and garnish with chopped chives.
To make aluminum packet, cut 4 x 18” lengths of foil, place two pieces of foil on top of one another, sprinkle wood chips in the middle, place the remaining two pieces on top, and fold each side twice over creating a 1” folded foil border.
