Wild Wonders® Tomato Bombs

Chef Nikki Dinki created these little explosions of flavor just for you! They’re the perfect appetizer for any occasion.

Ingredients

Basil and Balsamic Bombs
15 Wild Wonders® tomatoes
1 SUNSET® mini cucumber, cut into 15 1/4 inch slices
2 tbsp balsamic vinegar
2oz cream cheese, softened
2 tsp basil pesto

Garlic and Herb Bombs
15 Wild Wonders® tomatoes
1 tsp olive oil
2 garlic cloves
2oz cream cheese, softened
1/2 lemon, zest only
1/2 tsp thyme, finely chopped
1/2 tsp parsley, finely chopped

Directions

Basil and Balsamic Bombs
In a small skillet over medium heat, cook the vinegar until thick and syrupy, 5-7 minutes. It should reduce to 1 – 1 ½ teaspoons.
In a small bowl, combine the cream cheese, pesto and reduced balsamic and stir until well combined.
Cut off the bottom 1/3 of each tomato and hollow out the large part with a melon baller or paring knife. Fill the tomato with the cream cheese mixture, top with a slice of cucumber and the bottom piece of tomato, stick a toothpick through the whole thing and serve.

Garlic and Herb Bombs
In a small skillet over medium heat, cook the oil and garlic until garlic is fragrant and tender. Remove from the pan and let cool while you continue the dish.
In a small bowl mix together the cream cheese, lemon zest, thyme and parsley. Once well mixed add the garlic and stir until combined.
Cut off the bottom 1/3 of each tomato and hollow out the large part with a melon baller or paring knife. Fill the tomato with the cream cheese mixture, top with a slice of cucumber and the bottom piece of tomato, stick a toothpick through the whole thing and serve.
