Wild Wonders® Quinoa Salad
Light and fresh, this dish from Roger Mooking is full of flavor and super healthy! You won’t feel guilty going back for seconds.
2 C quinoa
4 C water
½ C finely diced red onion
½ C feta crumbled
1/2 C julienned flatleaf parsley
1 ½ C Wild Wonders® tomatoes, quartered
¼ C extra virgin olive oil
Kosher salt for seasoning
Freshly ground black peppercorns for seasoning
Place quinoa in pot with water and bring to a boil. Cover the pot and reduce to low. Cook until all of the water is nearly fully absorbed, approximately 10 minutes. Fluff and transfer quinoa to a serving platter. Sprinkle remaining ingredients evenly over the quinoa in order of ingredients listed and season with salt and pepper to taste.
