Wild Wonders® Penne with Arugula Pesto
Peppery arugula is made into a fragrant pesto which is a delicious pairing with the sweet Wild Wonders® Tomatoes.
Makes 4 servings
2 cups SUNSET® Wild Wonders® Tomatoes, halved
1 box (370 g) penne
1 cup arugula
1/2 cup Parmesan cheese shavings (optional)
2 cups arugula, packed
1/4 cup walnuts
2 tbsp finely grated Parmesan cheese
1 clove garlic
1/4 cup extra virgin olive oil
1 tbsp lemon juice
1/4 tsp each salt and freshly ground pepper
In a food processor, pulse together arugula, walnuts, cheese, garlic, olive oil, lemon juice, salt and pepper until smooth. Set aside.
Cook pasta according to package directions. Drain, reserving 1/4 cup (60 mL) of the pasta water. Return pasta to saucepan and toss with arugula pesto, adding reserved pasta water.
Transfer to serving bowl. Toss with tomatoes, arugula and Parmesan shavings.
