Wild Wonders® & Peach Salad
½ c ricotta
2 c halved Wild Wonders® tomatoes
2 large peaches, sliced
¼ c torn fresh basil leaves
2 tbsp torn fresh mint leaves
finishing sea salt to taste
freshly ground black peppercorns to taste
To Garnish: extra-virgin olive oil and finishing sea salt
In a small bowl, season ricotta with salt and pepper to taste. Set aside.
Assemble salad directly in serving bowls. For each serving, place ½ cup of tomatoes in a bowl and lightly season with salt and pepper. Arrange ½ sliced peach over tomatoes, then dollop with 2 tablespoons of ricotta here and there.
Scatter torn herbs over and finish with a drizzle of extra virgin olive oil and a final sprinkle of finishing sea salt.
Serve right away.
