Tomato and Mint Salad
Featuring Tomato of Yore™, this salad is so simple and so delicious.
1/2 cup red onion, thinly sliced
1/3 cup fresh mint, thinly sliced
2 tbsp extra virgin olive oil
zest of 1/2 lemon
19 oz can of chickpeas, drained and rinsed
1 cup loosely packed Arugula
6 Tomato of Yore™ tomatoes, wedged
Kosher salt to taste
freshly cracked black peppercorns
In a small bowl, cover red onions with cold water and let sit for 5 minutes. Drain well and place in a large bowl together with remaining ingredients, excluding tomatoes. Gently toss together until well combined. Season to taste with salt and pepper.
Add tomatoes and season again with salt and pepper then gently toss.
Transfer to a serving platter and make all your carnivore friends rethink their whole life.
