SUNSET® Wild Wonders® Rainbow Ravioli


2.2 lb best quality store bought cheese ravioli (1kg package)
1/8 c olive oil
1/2 tsp finely chopped fresh garlic
3 c halved Wild Wonders® tomatoes
pinch freshly ground black peppercorns
1/4 tsp dried chili flakes
4 tbsp freshly grated Parmigiano-Reggiano
2 tsp extra virgin olive oil


Cook ravioli according to package instructions in well salted water. Reserve about 1/2 cup cooking water, then drain the pasta.

Heat a large skillet to medium high heat, add olive oil and garlic and let sizzle for about 6 seconds, making sure to not brown the garlic. Add 2 cups Wild Wonders® tomatoes, simmer for 2 minutes until it’s reduced by about 1/2 the amount. Let sauce cool slightly, then puree to desired consistency.

Transfer the sauce back to the skillet, add reserved cooking water, remaining tomatoes, drained pasta, black pepper and chili flakes. Cook until tomatoes are warm, approximately 3 minutes.

Divide the pasta among 4 plates, drizzle with olive oil, and garnish with fresh Parmesan cheese.
