SUNSET® Roma and Goat Cheese
6 Roma tomatoes cut in half lengthwise
1 tbsp fresh garlic, finely chopped
Kosher salt to taste
Freshly ground black peppercorns to taste
2 tbsp extra virgin olive oil
2/3 c crumbled chèvre goat cheese
1/2 tsp coarse sea salt
12 small fresh basil leaves
Balsamic glaze to taste, optional
Preheat oven broiler.
Place the tomatoes cut side up on a baking sheet and season with salt and pepper.
In a small bowl, mix together the garlic, pinch of salt, pinch of pepper and olive oil. Top each tomato half with equal amount of goat cheese. With a spoon, evenly pour the garlic and oil mixture over the goat cheese. Place in the oven on the top rack and broil for about 3 and a half minutes, or until the goat cheese softens slightly.
Sprinkle with sea salt, drizzle with balsamic glaze, top with fresh basil and don’t let your partner eat them all before dinner!
