SUNSET® Mediterranean Baked Cherry Tomato and Halibut Purses
This healthy preparation offers up big flavors in a small package!
Makes 4 servings
1 (6-oz) package SUNSET® Cherry Tomatoes, halved
4 foil squares, 12” x 18” each
4 halibut steaks or fillets, fresh or frozen (thawed), or other thick-cut white fish
salt and pepper
2 Tbsp prepared olive tapenade
1/2 red onion, thinly sliced
1/2 SUNSET® Yellow or Orange Sweet Bell Pepper, thinly sliced
1 (6-oz ) jar marinated artichoke hearts, drained and coarsely chopped
pinch red chili flakes
2 Tbsp fresh lemon juice
2 Tbsp olive oil
2 tsp dried whole oregano
Preheat oven to 450°F.
Lay out foil squares, dull side up, and spray with cooking spray. Pat fish dry with paper towels. Season fish liberally with salt and pepper, and place a piece of fish on each square. Spread 1/2 tablespoon tapenade on each piece of fish.
In a medium bowl, toss together the tomatoes, onion, pepper slices, artichokes, chili flakes, lemon juice, olive oil and oregano. Divide the topping evenly between the pieces of fish.
To seal packets, bring up foil sides and double-fold top and ends. Seal packets well, but leave room for heat circulation inside. Place packets on a baking sheet and bake for about 12 – 15 minutes, or until fish is just cooked and opaque throughout.
To serve: open each packet and serve with veggies and juices over the fish. Or serve each packet on a plate and let guests open packet up. (Be careful they’re full of hot steam!)
