SUNSET® Grilled Shrimp and Grape Tomato Cocktail Skewers
A fun twist on the traditional “shrimp cocktail”! Serve as an appetizer or cozy up to a steak for a sassy riff on a surf-and-turf.
Makes 6 skewers
1 pint SUNSET® Grape Tomatoes
11/2 medium sweet onion cut into 1” chunks (or 18 pickled cocktail onions)
12 medium raw shrimp, peeled and deveined
Oil for brushing
Salt and pepper to taste
1/2 cup purchased cocktail sauce (plus more for serving if desired)
6 metal skewers or 10″ heavy wood skewers soaked in water
Garnish: 2 – 3 cups shredded lettuce, lemon wedges
Thread ingredients onto skewers in the following order: onion, grape tomato, shrimp. Repeat. Finish with a piece of onion and a tomato.
Lightly brush skewers on each side with oil and season to taste with salt and pepper.
Preheat grill to medium-high and cook skewers, turning and basting regularly with cocktail sauce, until shrimp is cooked through, about 5 – 6 minutes. Arrange on platter of shredded lettuce with lemon slices and additional cocktail sauce if desired.
