SUNSET® Grand BLT Sandwich with Tomatoes on the Vine
The beautiful, bold color and sweet flavor of ripe tomatoes paired with the creaminess of the garlic-and-herb cheese make for a delicious contrast to the salty, crisp bacon and crunchy lettuce. I’m sure you’ll agree that this is the ultimate BLT!
Makes 4 servings
2 SUNSET® Tomatoes on the Vine,
red and yellow
Freshly ground black pepper
1 French baguette, cut into 4 pieces, or 8 rustic bread slices
8 Tbsp (about 4 oz) Boursin or Rondelé garlic-and-herb cheese, softened
12 – 16 slices bacon, cooked crispy
4 – 8 tender inner leaves of romaine
8 bamboo or fancy picks
Cut tomatoes into 1/4″ slices. Sprinkle with pepper. Set aside.
If using a baguette, split sections horizontally. Spread each baguette piece or bread slice with 1 tablespoon softened cheese. Lay out bacon on sandwiches, then tomatoes, and then top with romaine. Close sandwiches, pick each with 2 picks, and cut sandwiches in half. Serve immediately.
