SUNSET® Cherry Tomato, Sweet Corn and Avocado Pico
Excellent with corn chips for scooping or as a topper for grilled salmon, shrimp or chicken.
Makes about 3 cups
1 (6-oz) package SUNSET® Cherry Tomatoes
2 Tbsp fresh lime juice
1/4 cup finely minced red onion
1/4 cup coarsely chopped fresh cilantro
1/2 tsp salt
1 small fresh hot pepper, finely minced
2/3 cup frozen corn, defrosted
1 ripe avocado, diced
In a large bowl mix together lime juice, onion, cilantro, salt and hot pepper. Fold in tomatoes, corn and avocado.
If fresh corn is in season, cut kernels from the cob and microwave, covered, for about 1 minute. Or grill 1 ear husked corn and then cut it off the cob.
