SUNSET® Rainbow Buddha Bowl

Makes 4 servings

Ingredients

1 ALOHA™ pepper, cut into thin rings
2 c Angel Sweet® tomatoes, cut in half
2 c shredded purple cabbage
1 avocado, cut in half, peeled and sliced
2 c brown rice, cooked
one 19-ounce can chickpeas, rinsed and drained
1 package pea shoots
Orange Ginger Vinaigrette (recipe below)
finishing sea salt to taste
freshly ground black peppercorns to taste
2 limes, cut into wedges
¼ c chopped fresh basil leaves

Orange Ginger Vinaigrette
½ c fresh orange juice
1 tbsp orange zest
¼ c rice vinegar
2 tbsp grated fresh ginger
1 tbsp chopped fresh coriander
1 tbsp honey
½ c grapeseed oil
finishing sea salt & freshly ground black peppercorns to taste

Directions

Add all Orange Ginger Vinaigrette ingredients to a blender or food processor and combine until smooth and creamy.

To assemble, divide equal amounts of rice, vegetable, and protein into four bowls in small groupings, and drizzle with Orange Ginger Vinaigrette. Season with salt and pepper. Serve with lime wedges and garnish with chopped basil. Photograph and share your creation on Insta, then dig in and enjoy!
