Zoodle & Mini Kumato® Salad

Ingredients

1 large green zucchini, approx. 10-12 ounces
1 large yellow zucchini, approx. 10-12 ounces
2 c julienned Sweet Twister™ pepper
¼ c fresh sage
¼ c fresh mint
¼ c fresh basil
1 8-ounce container Mini Kumato®, cut in half
1 c julienned radicchio
kosher salt
freshly ground black peppercorns

Caramelized Onion Vinaigrette
½ c extra-virgin olive oil, plus 1 tablespoon
1 c sliced yellow onions
½ c white wine vinegar
3 garlic cloves, peeled
2 tbsp freshly squeezed lemon juice
2 tbsp honey
kosher salt
freshly ground black peppercorns
½ c grapeseed oil

Directions

Spiralize zucchini and mix in a medium bowl with peppers and torn herb leaves then toss with Caramelized Onion Vinaigrette.

Add halved Mini Kumato® tomatoes and mix gently to avoid crushing the tomatoes.  Season with salt & pepper to taste.  Divide mixture into 4 salad bowls or plates and garnish with julienned radicchio and more torn herbs if desired.

To Make Caramelized Onion Vinaigrette:

In a pan, over medium heat, sauté onion in 1 tablespoon of olive oil.  Continue stirring with a wooden spoon until they turn into a golden colour and start to caramelize, about 30 minutes. Deglaze onion mixture in pan with white wine vinegar and cook for an additional minute. Remove from heat and set aside to cool.

In a food processor or high-speed blender, add cooled onion mixture, garlic, lemon juice, and honey. Blend until completely smooth. Slowly drizzle the remaining oil through the top while blending until mixture turns to a thicker consistency. Season with salt & pepper to taste.
