Mini Cucumber Pogos
This delicious vegetarian snack is the perfect alternative to the traditional pogo stick.
6 SUNSET® Mini Cucumber, quartered
3 sheets Filo pastry
¼ lb butter, melted
2 sprigs fresh thyme, finely chopped
¼ bunch chives, finely chopped
Lay first layer of filo on your work table and brush with melted butter. Season with salt and pepper. Place second sheet on top of first and brush with melted butter, sprinkle chopped herbs evenly across this layer. Place third sheet of filo down and smooth out to avoid wrinkles.
Cut filo in pieces as wide as the cucumber quarters and long enough to go around the cucumber 1.5 times and place on a 6 inch skewer. Brush edge of filo to ensure it is sealed and place the skewered cucumber on a parchment covered baking sheet.
Bake at 350 F for 15 minutes or until filo is golden brown.
Garnish using your favourite condiment.
