Leftover Turkey Tacos

Turn your holiday leftovers into a culinary masterpiece! This delicious and quick recipe from Roger Mooking is the perfect next-day meal solution from last night’s turkey dinner.

Serves 4

Ingredients

Angel Sweet™ Tomato Olive Salsa
2 mini cucumbers, julienned (keep aside)
3/4 C sliced Angel Sweet™ tomatoes, 1/4″ thick
3 large green olives, diced
1 Tbsp finely diced red onion
2 Tbsp diced Sweet Twister™ pepper
1Tbsp loosely packed and thinly sliced fresh basil leaves
1 tsp chopped fresh thyme
1/8 tsp kosher salt
1/8 tsp ground black pepper
2 Tbsp extra virgin olive oil
1/2 Tbsp white wine vinegar
1/2 lime, juiced

Taco
2 C shredded leftover turkey meat, reheated
12 x 4″ tortillas
4 tsp mayonnaise
1/4 tsp chipotle in Adobo
Kosher salt to season

Directions

Combine and store all salsa ingredients except the cucumbers and set aside for 10 minutes. In a separate bowl, combine mayonnaise and chipotle. Spread mayonnaise mix inside each tortilla. Divide turkey meat among the tortillas, followed by julienned cucumber. Sprinkle josher salt to season cucumbers and top with salsa
