Lamb & Sweet Twister™ Curry
This one pot meal is just the ticket to get over that midweek hump.
1 Tbsp coconut oil or ghee
2 garlic cloves, smashed
2 pieces of ginger, 1/2 inch
1 C white onion, finely diced
3/4 C Sweet Twister™ peppers, diced
1 Tbsp Garam Masala
2 lbs boneless lamb leg
1 green finger chili, halved lengthwise
5 One Sweet® tomatoes, diced
1 tsp ginger, finely diced
1/4 tsp freshly ground black peppercorns
Seeds of 2 cardamom pods, crushed
1 1/2 tsp ground cumin
3/4 tsp ground coriander
1 1/2 C chicken stock
Chopped chives for garnish
1/2 C yogurt
2 Tbsp mini cucumbers, finely diced
2 Tbsp Sweet Twister™ peppers, finely diced
1/8 tsp ground cumin
1 tsp lemon juice
Kosher Salt for seasoning
Ground pepper for seasoning
Before beginning, prep all the ingredients as listed above.
Preheat a large high-sided skillet to medium-high heat. Add oil or ghee, immediately followed by garlic and sliced ginger. Allow them to brown, moving the pan around often. Reduce heat to medium and add onion, peppers and masala, then allow to brown for approx. 3-4 minutes, stirring often. Add lamb and chili and allow to sauté for 2 minutes. Add remaining ingredients and stir the pot, reducing heat to low. Allow to simmer for 45 minutes until the sauce is reduced to 1/3 of its original volume. Cover the pot and simmer for another 30 minutes. Season to taste with Kosher salt.
Combine all ingredients in a dry bowl and season with salt and pepper to taste. Serve with lamb curry.
Raita is an Indian side dish, made of yogurt and raw vegetables. Serve with the lamb curry and your choice of rice.
