Fried Brown Tomatoes

Why give green tomatoes all the fried glory? Fry up some Kumato® slices for a southern treat with a twist.

Serves 4


One Sweet® Salsa

  • 3 limes, halved
  • 1 pint One Sweet® tomatoes, quartered
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • 1 clove of garlic, minced
  • 1/8 tsp kosher salt
  • 1/8 tsp freshly ground black pepper

Fried Kumato® Tomatoes

  • ½ C all-purpose flour
  • 4 eggs, beaten
  • 2 C cornmeal
  • 1/8 tsp salt
  • 1/8 tsp ground black pepper
  • 5 Kumato® tomatoes
  • 1 ½ C vegetable oil


One Sweet® Salsa

  1. Preheat a grill to high heat. Place lime halves flat side down on the grill and allow to char. Do not move until charred, approximately 8 minutes. Set aside.
  2. Add tomatoes, thyme, rosemary, garlic, salt and pepper to a bowl. Squeeze one half of a grilled lime in and toss to coat evenly. Refrigerate.

Fried Kumato® Tomatoes

  1. Heat vegetable oil in a medium cast iron skillet to 325F.
  2. Place each the flour, beaten eggs, and cornmeal in three separate dishes.
  3. Slice each tomato into 3 evenly thick slices, discarding the tops and bottoms of the tomatoes.
  4. Season each tomato with salt and pepper then place slices into flour, evenly coating the slice. Tap off excess flour and place into egg mixture. Once evenly coated, place egg-washed tomatoes into cornmeal. Repeat with all slices.
  5. Line a tray with paper towels for fried tomatoes.
    In small batches, fry tomato slices for 90 seconds on each side, or until golden brown.
    Remove and immediately place on paper towel lined tray.
    Season with salt while still hot and wet.
