Campari® BLT Lettuce Cups

This fresh take on a classic BLT is perfect as an appetizer or quick lunch.

Makes 4 side dish servings


4 Campari® tomatoes, cut into wedges
4 Y.E.L.O.™ tomatoes, cut into wedges
1/4 cup mayonnaise
2 tbsp plain 0% Greek yogurt
2 tbsp finely chopped fresh chives
2 tbsp lemon juice
1 tsp finely grated lemon zest
1 tsp honey
1/4 tsp each salt and freshly ground pepper
8 Boston lettuce leaves
8 slices bacon, cooked and crumbled


Whisk the mayonnaise with the yogurt, chives, lemon juice, lemon zest, honey, salt and pepper. Dressing can be stored, tightly covered in the refrigerator, for up to 5 days.

Arrange the lettuce leaves on a platter. Divide the tomatoes and bacon evenly among the lettuce leaves. Drizzle with dressing, to taste. Serve immediately.

Chef's Notes

Make this an entrée salad by adding chopped grilled chicken.
