Campari® Avocado Tostadas

Crispy tostadas are the perfect way to enjoy fresh tomatoes, creamy avocado and tangy feta.

Makes 4 entrée servings


8 Campari® tomatoes, sliced
6 Y.E.L.O.™ tomatoes, sliced
1 cup red wine vinegar
3/4 cup granulated sugar
1 tbsp salt
1 red onion, peeled and thinly sliced
2 ripe avocados, peeled and mashed
8 tostadas
Salt and freshly ground pepper, to taste
1/2 cup crumbled feta cheese


Whisk the vinegar with the sugar and salt in a medium, microwave-safe bowl. Cover and microwave on high for 3 minutes or until boiling.  Add the onions and toss to coat. Chill for 30 minutes or up to 3 days.

Season tomato slices with salt and pepper to taste. Spread some mashed avocado on each tostada. Top with sliced tomatoes, pickled onions and feta cheese. Serve immediately.

Add grilled shrimp or shredded chicken for extra protein.
