Ingredients
- 1 tsp canola oil
- 1/2 cup onion, finely diced
- lean ground beef
- 1 pkg. taco seasoning
- 2 cups Sugar Bombs® tomatoes, quartered and divided
- 1- 15oz can black beans, drained and rinsed
- 12 corn taco shells
- 2 cups tex mex shredded cheese mix
- cilantro, picked
- iceberg lettuce, shredded
- sour cream
- guacamole
- limes
Directions
- Preheat oven to 350°F.
- In a large skillet over medium heat, add oil. Sauté onion for 2-4 minutes until translucent.
- Add the ground beef, breaking it up with a wooden spoon, cook for 5-7 minutes, until brown.
- Stir in the taco season, following package directions.
- Add half of Sugar Bombs® tomatoes and black beans, stir to combine. Turn the heat to low and simmer for 4-6 minutes, stirring occasionally.
- In two high-sided baking pans, line with the taco shells.
- Spoon taco mixture into Top with cheese. Bake for 10-15 minutes, until cheese is melted.
- Top with cilantro, lettuce, remaining Sugar Bombs®, sour cream, guacamole and fresh limes, if desired.
