Ingredients
For the salad:
- 1 pint SUNSET® Umami Bombs® tomatoes, quartered
- 3-4 Persian cucumbers, diced3 rainbow radishes or any radishes, chopped
- 3 cups Romaine lettuce, roughly chopped
- 1/2 small red onion, thinly sliced
- 1/4 cup fresh mint leaves
- 1/4 cup fresh flat-leaf parsley leaves
- 1/4 cup fresh dill
- 1 cup store-bought crispy chickpeas
- Flaky sea salt & cracked black pepper, to taste
For the garlic-sumac-pomegranate dressing:
- 1 small garlic clove, finely grated
- 2 tablespoons fresh lemon juice
- 1 teaspoon sumac
- 1 tablespoon pomegranate molasses
- 1/3 cup olive oil
- Salt and pepper, to taste
Directions
- Make the dressing:
In a small bowl or jar, whisk together the garlic, lemon juice, sumac, pomegranate molasses, olive oil, salt, and pepper until emulsified. - Prep the salad base:
In a large bowl, combine the Umami Bombs tomatoes, cucumber, rainbow radishes, lettuce, red onion, mint, parsley, and dill. - Add chickpeas and serve:
Just before serving, toss in the crispy chickpeas. Drizzle the dressing all over and toss everything gently to coat. Serve and enjoy!
